Skillet Apple Pie
I found a great recipe for a skillet apple pie from recipes.com and changed it up a little - it was delicious!
Ingredients:
(pie filling)
4 pounds of honey crisp apples
1 teaspoon of ground cinnamon
3/4 cup of granulated sugar
1/2 cup of butter
1 cup of firmly packed brown sugar
1 egg white
2 tablespoons of granulated sugar
(pie crust)
2 cups of flour
1 cup of shortening
1/2 cup of water
Directions:
- Peel apples, cut into 1/2 inch thick wedges, toss in cinnamon and 3/4 cup of granulated sugar - I put them in a large bowl and put the stop on and shook them up
- Prepare pie crust - "fork" together flour, shortening and water
- Roll out 1/2 of pie crust
- Preheat oven to 350
- Melt butter and brown sugar in 10 inch skillet for about 2 minutes or until sugar dissolves
- Remove from heat and place pie crust in skillet over brown sugar and butter mixture
- Spoon apple mixture into pie crust
- Roll out other pie crust and place on top of apple mixture, press down sides with fork
- Whisk egg whites, brush on top of pie crust, sprinkle with 2 tablespoons of granulated sugar, cut 5 slits in center of pie crust to let heat escape
- Mine took about an hour and 15 minutes - I started checking it at one hour - then let it cool for about 30 minutes
