One of my favorite cookie recipes of all time and definitely the easiest - I found this recipe right on the side of my Pillsbury Moist Supreme Lemon cake mix - it was soo easy!

I found a great recipe for a skillet apple pie from recipes.com and changed it up a little - it was delicious! Ingredients: (pie filling) 4 pounds of honey crisp apples 1 teaspoon of ground cinnamon 3/4 cup of granulated sugar 1/2 cup of butter 1 cup of firmly packed brown sugar 1 egg white 2 tablespoons of granulated sugar (pie crust) 2 cups of flour 1 cup of shortening 1/2 cup of water Directions: Peel apples, cut into 1/2 inch thick wedges, toss in cinnamon and 3/4 cup of granulated sugar - I put them in a large bowl and put the stop on and shook them up Prepare pie crust - "fork" together flour, shortening and water Roll out 1/2 of pie crust Preheat oven to 350 Melt butter and brown sugar in 10 inch skillet for about 2 minutes or until sugar dissolves Remove from heat and place pie crust in skillet over brown sugar and butter mixture Spoon apple mixture into pie crust Roll out other pie crust and place on top of apple mixture,

Today marks one year since I started my blog...it has grown SO much, I went from maybe 3 view a post to now around 40-60, it has been an amazing process and I hope to grow my blog more and more!  When I first started I just posted whenever I felt like it, and it was never consistent, I am happy to say that now I post (pretty much) every Wednesday and Sunday!  In one year my blog has been able to share so many amazing things in my life and it has brought me so much joy being able to share these things with others - this is my creative outlet and I absolutely adore it!  Also this summer I started an Instagram for my blog - so make sure to follow that - @elegantlyelleb - there I post lots of random things and by following it you will never miss a blog post as I always post when I do a blog post on here!  It's really fun - right now I'm trying to figure out a new theme...my theme was blue which was working out great, but now I feel like changing it to something...maybe something l
