Skillet Apple Pie

I found a great recipe for a skillet apple pie from recipes.com and changed it up a little - it was delicious!

Ingredients:
(pie filling)
4 pounds of honey crisp apples
1 teaspoon of ground cinnamon
3/4 cup of granulated sugar
1/2 cup of butter
1 cup of firmly packed brown sugar
1 egg white
2 tablespoons of granulated sugar
(pie crust)
2 cups of flour
1 cup of shortening
1/2 cup of water

Directions:
  1. Peel apples, cut into 1/2 inch thick wedges, toss in cinnamon and 3/4 cup of granulated sugar - I put them in a large bowl and put the stop on and shook them up
  2. Prepare pie crust - "fork" together flour, shortening and water
  3. Roll out 1/2 of pie crust
  4. Preheat oven to 350
  5. Melt butter and brown sugar in 10 inch skillet for about 2 minutes or until sugar dissolves
  6. Remove from heat and place pie crust in skillet over brown sugar and butter mixture
  7. Spoon apple mixture into pie crust
  8. Roll out other pie crust and place on top of apple mixture, press down sides with fork
  9. Whisk egg whites, brush on top of pie crust, sprinkle with 2 tablespoons of granulated sugar, cut 5 slits in center of pie crust to let heat escape
  10. Mine took about an hour and 15 minutes - I started checking it at one hour - then let it cool for about 30 minutes
